HI Jeff,

Im looking to do the same. I love pizza, and want to open my own coal brick oven pizzeria. Im doing all my homework, and my mom who was born in italy, is teaching me all about the dough, but I still can not master that grimaldis (patsys) taste. Can you please help me. Does he or you use 00 flour? Do you mix your flour. We are doing the sourdough starter also. Thanks Buddy

I saw Jeff Varasano on the morning news. I also saw a women making pizza. I believe it is a friend I met at a campground in N. Ga. Rocky Mountain. Could you please ask her to e-mail me. Let her know: (Yes we are still selling the 29′ Camper.) My husband and I are originally from NJ and are always looking for authentic food. Yes we are telling everyone about your place.

My wife and I lived in Naples, Italy for 3 years = 1969-71 while stationed at the Nato Base in Bagnoli, Italy, a suburb of Naples. We lived in a very nice apartment close to the famous Naples soccer stadium and ate many pizzas from the local pizzerias. Yours look right on the button and I can almost taste the wonderful goodness of those pizzas straight from the brick oven, doused with olive oil, and folded into a newspaper. Good luck.
